They can provide a sense of what people considered to be of importance in a culture, they reflect food habits of a population, mark changes in lifestyle, and act as markers of historical events. This is reflected in such things as the use of more expensive\/exotic ingredients, changes in the methods of cooking and changes in how ingredients are measured.<\/p>\n<p>The recipe book (at least pre 20<sup>th<\/sup> century) was also not just a place for food recipes as we might expect nowadays, but also (despite increased availability of purchasable medical care) home to instructions on creating various medical concoctions intended to treat a myriad of ills. For instance, in one recipe book (<a href=\"https:\/\/dc.dorsetcouncil.gov.uk\/calmview\/Record.aspx?src=CalmView.Catalog&amp;id=D-BLX%2fF%2f36\" target=\"_blank\" rel=\"noopener noreferrer\">D-BLX\/F\/36<\/a>) in between recipes for Sweet Biscuits, Baked Apple Pudding, and German Pudding are recipes titled, \u201cExcellent for a cough\u201d, \u201cFor Sickness\u201d, and \u201cFor chilblains\u201d. The recipe is as follows:<\/p>\n<ul>\n<li><em>\u00bc lb equal butter and lard<\/em><\/li>\n<li><em>1 lb flour<\/em><\/li>\n<li><em>\u00bd lb brown sugar<\/em><\/li>\n<li><em>6 ounces of sliced citron<\/em><\/li>\n<li><em>\u00be teaspoonful of mixed spices<\/em><\/li>\n<li><em>1 \u00bd teaspoonful of ground ginger<\/em><\/li>\n<li><em>\u00bc pint of Warm Milk<\/em><\/li>\n<li><em>\u00bc pint of Cold Milk with a teaspoonful of Soda dissolved in it<\/em><\/li>\n<li><em>Yolks of 2 Eggs beaten<\/em><\/li>\n<li><em>White of one Egg beaten by itself<\/em><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>The first thing that is noticeable is the use of lard. Historically used in cooking and baking, lard began to fall out of favour in the 20<sup>th<\/sup> century as vegetable oils became more available and it was perceived as less healthy. The sliced citron was confusing, I wasn\u2019t sure if it meant literally slices of lemon, but I thought that would be a bit strange so just substituted with some grated lemon rind.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1812\" src=\"https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200723_140229-scaled.jpg\" alt=\"\" width=\"2560\" height=\"1920\" srcset=\"https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200723_140229-scaled.jpg 2560w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200723_140229-300x225.jpg 300w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200723_140229-1024x768.jpg 1024w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200723_140229-768x576.jpg 768w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200723_140229-1536x1152.jpg 1536w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200723_140229-2048x1536.jpg 2048w\" sizes=\"(max-width: 2560px) 100vw, 2560px\" \/><\/p>\n<p>The method is as below:<\/p>\n<blockquote><p><em>Crumble the butter, lard, and flour together first and then add to them the Sugar, Citron and Spices and Mix all together.<\/em><\/p>\n<p><em>Then mix the Warm \u00bc pint of milk with the \u00bc pint of Cold Milk which has the soda in it, and to there add the beaten yolks of Eggs, and then the one Whole of Egg which has been beaten by itself; and pour all on the other ingredients and mixing all together, and beating Very quickly for a few minutes, Pour into your buttered Cake Tin, and put that quickly into a brick oven and bake 1 and \u00bd hours.<\/em><\/p>\n<p><em>Make the cake two days before it is required for use.<\/em><\/p><\/blockquote>\n<p><img loading=\"lazy\" class=\"aligncenter size-large wp-image-1813\" src=\"https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200728_213223-1024x768.jpg\" alt=\"\" width=\"880\" height=\"660\" srcset=\"https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200728_213223-1024x768.jpg 1024w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200728_213223-300x225.jpg 300w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200728_213223-768x576.jpg 768w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200728_213223-1536x1152.jpg 1536w, https:\/\/news.dorsetcouncil.gov.uk\/dorset-history-centre-blog\/files\/2020\/08\/MVIMG_20200728_213223-2048x1536.jpg 2048w\" sizes=\"(max-width: 880px) 100vw, 880px\" \/><\/p>\n<p>Surprisingly, I didn\u2019t have a brick oven, and had to make to with a conventional fan oven at 160\u00b0. The verdict? Actually, it was a bit dry and not particularly gingery either.
